If American Hackleback caviar is similar to Caspian Osetra, then this American Paddlefish caviar would be best compared to Sevruga. Paddlefish flourishes in the Mississippi River. The beautiful steel grey pearls offer a silky texture and a complex flavor that many will tell you is the best substitute for Caspian sturgeon caviars, if somewhat saltier, at a fraction of the cost.
