While we all have our traditional favorites, there is something special about discovering a great new cheese. And, the best way to experience a new cheese is to try it. For those of you looking to expand your cheese repertoire, we have crafted a four cheese sampler from four continents of some little-known gems to serve at your next get-together. This assortment includes:
  • Volendam(Europe): If you are a Gouda lover, then this creamy Gouda is a must have! A staple for every refrigerator. (8 oz)
  • Hard Grana Provolone(South America): Originally from Lombardia, Italy, this cow's milk cheese was brought by Italian immigrants to Argentina. The cheese is recognized by its particular pear shape. During the aging stage, the cheese is hung (wrap and secure with a rope). This hard Provolone cheese develops a sharp, piquant flavor with age. (8 oz)
  • Great Ocean Road Cheddar(Australia): This sharp white cheddar hails from Australia, where it joins Stokes Point and Mainland Cheddar as a new favorite from down under. A buttery flavor separates this cheese from it's English inspiration. (8 oz)
  • Atalanta Blue(North America): Atalanta is the Greek goddess of hunt, travel, and adventure. The name Atalanta is thus appropriate for this new blue cheese from Wisconsin. It's a bold , crumbly cow's milk cheese that took several years to perfect. Enjoy it crumbled over salads, stirred into sauces, or on crackers. (8 oz)

Blue Stilton of just Stilton is England's only name-protected cheese. The name-control law stipulates that the cheese can only be manufactured in a specific area with milk from that area. Recipe and aging guidelines are laid down by the Stilton Cheese Makers' Association. The finished product is however not controlled and therefore Stilton's of various qualities can be found. The interior of our high quality Blue Stilton is crumbly when young, softening and darkening at the rind as it matures. It is a lovely creamy ivory color with well-spread blue veining growing from the center outward. The aroma is sharply nutty and the flavor is full of mellow nuts and fruit. The flavor strengthens as it matures. Blue Stilton cheeses are drum shaped with a thick, hard, uncracked crust which is usually grayish-brown and slightly wrinkled with whitish powdery patches. Blue Stilton is a versatile and easy to use ingredient in a variety of starters and main courses - a little goes a long way. Blue Stilton is best served at room temperature and is a must for any gourmet cheese board. We cut and wrap the Blue Stilton in wedges of 8-ounces and 1 pound.

Danish Blue is also known as Danablu, the Danes invented this blue gourmet cheese in 1927 as an alternative to Roquefort. Though quite unlike Roquefort, Danish Blue cheese has been a huge commercial success and is sold worldwide. Danish Blue cheese is factory made from pasteurized milk which has been homogenized to ensure a smooth curd and clear taste. It is rindless and comes in foil-wrapped shapes. Danish Blue paste is milk white with very blue veins and a few irregularly distributed holes. It is soft and a little crumbly but surprisingly easy to slice. The flavor is distinctively sharp and salty and without qualification, quite consistently enjoyable. Danish Blue is a welcome addition to any gourmet cheese board, tasting session or simply to enjoy in one of those epicurean moments of self indulgent pleasure. Fourme d'Ambert is an ancient French gourmet cheese from the Auvergne that was being made long before English Stilton, which it somewhat resembles. Fourme d'Ambert is a raw cow's milk gourmet cheese with light blue veining. The cheese has a rough gray-brown rind and the cheese is firm, has an ivory color with greenish-blue veining. It has an interesting aroma of roasted nuts and a fruity flavor and is aged for over 60 days. 'Fourme' comes from the Latin 'forma' (form), referring to the container used to hold the curd. Afterwards, the name 'forme' was retained in the mountains of Forez and Auvergne to refer to cheeses from the region. Fourme was sold primarily at the market in the village of Ambert, thus giving it its name. Fourme d'Ambert has long been one of our favorite French gourmet cheeses and is equally suited to an afternoon epicurean taste treat or being featured on the after dinner cheese board- suitably following that most special of meals. Pecorino Toscano is an Italian sheeps' milk cheese that is considerably milder than the Pecorino Romano. This particular Pecorino Toscano is made Val D'Orcia under strick supervision of the Consortium of Pecorino Toscano. Fresh Pecorino Toscano is mild, and rather creamy, with some nutty hints. With age Pecorino Toscano becomes firmer and sharper, though it never approaches the sharpness and the saltiness of Pecorino Romano. This gourmet cheese is aged for approximately 6 months and has a firm texture, a nutty flavor and hints of butterscotch. We cut and wrap this cheese in wedges of 8 ounces and 1 pound.
